Matt Mattox

Biography

Matt Mattox was hired as the offensive line coach at UNT in January of 2026. Mattox joined the UNT staff after spending the 2024 and 2025 seasons in the same role at East Carolina. A veteran coach with 20 seasons of experience, Mattox has made stops at East Carolina, Texas, UTSA, Bowling Green, Eastern Illinois, South Florida, Tulsa and others. During his career, he has been part of eight bowl games, nine conference championship teams and two NJCAA National Championship programs. In 2025, ECU posted a 9-4 overall record, highlighted by a win over Pittsburgh in the Military Bowl. Mattox coached an offensive line that helped the Pirates rank 19th nationally in total offense, while averaging 32.7 points per game, which ranked 24th in the FBS. That season, Mattox played a key role in the development of First Team All-American Conference selection Jimarion McCrimon and Second Team All-Conference honoree Emmanuel Poku. ECU was one of only two American Athletic Conference programs, along with UNT, to have multiple offensive linemen earn first or second team all-conference recognition. In 2024, Mattox’s offensive line helped ECU rank among the FBS leaders in total offense (436.4 yards per game, 24th), passing offense (253.3 yards per game, 24th), scoring offense (32.0 points per game, 34th) and rushing offense (172.4 yards per game, 50th).
